About These Units

Metric volumes (liters, milliliters, cubic meters) are the global standard. A liter was originally defined as the volume of 1 kg of water at 4°C – which is why a liter of water weighs almost exactly a kilogram.

US volumes (gallons, quarts, pints, cups, fluid ounces) are used primarily in American cooking and for fuel. The relationships: 1 gallon = 4 quarts = 8 pints = 16 cups.

Important: US gallons and UK (imperial) gallons are different. A US gallon is 3.785 liters, while a UK gallon is 4.546 liters. This matters when comparing fuel economy or following British recipes.

Cooking measurements (cups, tablespoons, teaspoons) vary slightly by country, but US standard is most common in recipes online.
